Classic Tex Mex Meals

The taco is probably the food most thought of as Mexican cuisine. The taco has a long history and has been eaten for hundreds of years in its most simplistic form as a corn tortilla filled with small fish baked over an open flame. The modern taco can still be filled with seafood but the more common Tex Mex style is filled with fajita meat. Fajita steaks are the tough linear meat under the cows stomach often thought of as a cheap cut of meat. Tacos can also be filled with chicken both grilled and stewed in a mixture of chili and tomato along with other seasonings.

The burrito is much like a taco but is larger and is often filled with more ingredients. The traditional burrito found threw out south Texas is served simply with lettuce, tomato and filled with your choice of meat. Nontraditional burritos can also be found at many restaurants they often include an abundance of ingredients including Mexican style rice,beans,cheese, sour cream, guacamole and salsa.

Tortas are basically Mexican sandwiches that are served on a flat french bread. The tortas are filled with similar meats as the tacos and burritos and are often garnished with shredded lettuce tomato and shredded cheddar cheese. The top and bottom buns are usually toasted and smeared with guacamole as a condiment.

Enchiladas as they existed as a street food where fresh corn tortillas dipped into a chili sauce and served with out any filling at all. The modern version of enchiladas can be found filled with almost anything from different cheese mixtures to any variety of meats. Enchiladas can also be served with a traditional red chili sauce or with a green sauce.
